Chicken tarragon
INGREDIENTS:
Boneless chicken breast fillets 4 pieces
Garlic cloves 3
Salt To taste
Crushed black pepper To taste
Dried tarragon 1 tsp
Butter 3 tbsp
Oil as required
For the sauce:
Butter 2 tbsp
Onion finely chopped 1
Oil as required
Chicken stock 3/4 cup
Salt To taste
Crushed black pepper To taste
Fresh cream 1 cup
Dried tarragon or fresh 2 tsp
METHOD:
Flatten fillets with a meat hammer. Marinate with salt, pepper, garlic and tarragon. Now heat butter and oil in a pan. Fry the fillets over medium heat till golden. Drain on a paper towel and set aside. In the same pan make the sauce by adding the butter and 1 tbsp oil. Add onions and saute till transparent. Then add the chicken stock and tarragon along with pepper allow it to simmer for 3 to 4 minutes till the sauce is slightly reduced. Add the cream and whisk well to make an even sauce taste and season with salt and pepper. Cook for a further minute or 2 on a low flame. Place the chicken fillets in a serving platter and pour over the sauce and serve.
